Lemon Zucchini Bread with Lemon Glaze

I’ve been on this obsession to cook bread lately. When I moved into our new place a little over a month ago, the previous tenants had left a bread dish in the cupboard. Being still a young college student without many cooking utensils and baking equipment in the kitchen, I’ve never owned a “fancy” bread dish. Well I took advantage of someone’s trash and made it my treasure. Yes, if you’re wondering, I washed it first! ๐Ÿ˜›

I’ve utilized the bread dish by making several loaves of the best banana bread ever, and by request from a room-mate zucchini bread came to life. To be honest, I had never had zucchini bread. Do not ask me why, but zucchini + bread just did not seem like a compatible match to me. But, my room-mate insisted so of course, I gave in.

So, I browsed through a couple of recipes online until I stumbled upon a Lemon – Zucchini Bread. YEah, that sounds amazing doesn’t it? I was like…fresh? YEAH! Lemons = Fresh. The perfect way to spice up a traditional Zucchini bread. This also gave me the opportunity to let me rely on natural ingredients for fantastic flavor. There is so much flavor in lemons. The juice..and the ZEST! Zesting a lemon can be a wonderful experience. Not only does it bring beautiful bright color to your dish but it also brings a pleasant lemony aroma to your kitchen that is beyond refreshing.

Overall, this is a recipe I am so glad that I stumbled upon and will definitely be making it in the future. Oh, did I fail to mention it comes with a lemon glaze that is the perfect icing on the cake to this wonderful dish? ๐Ÿ˜‰ Enjoy.

Ingredients:

  • 2 Cups – Flour
  • 2 Tsp – Baking Powder
  • 1/2 Tsp – Salt
  • 2 – Eggs
  • 1/2 Cup – Vegetable Oil
  • 2/3 Cup – Sugar
  • 1/2 Cup – Buttermilk
  • Juice of 1 Lemon
  • Zest of 1 Lemon
  • 1 Cup – Grated Zucchini
  • For the Glaze: Juice of 1 Lemon/ 1 Cup – Powdered Sugar

Instructions:

  • Preheat your oven to 350 Degrees & Grease your bread pan.
  • In a large bowl, mix your flour, salt, and baking powder.
  • In a medium bowl, beat 2 eggs then add in oil and sugar. Blend well.
  • Add in your buttermilk, lemon juice, lemon zest. Blend well.
  • Then fold in your grated zucchini!
  • Add this mixture to your dry ingredients and mix well, but don’t over-mix!

  • Pour your batter into the bread pan and bake for 45 minutes.
  • Cool in pan for 10 minutes.
  • While the bread is cooling, make your glaze.
  • In a small bowl, mix the juice of 1 lemon with a cup of powdered sugar.
  • Let the glaze set and then serve.

The Best Banana Bread Recipe

Now, I am not lying when I say it is the best. It really is! There are several…more like hundreds, of different variations when it comes to making banana bread. Being a lover of bread in general, I have used several different banana bread recipes.

Now, I know everyone believes that their recipe for banana bread is the best, but let me tell you.. I think I’ve got you beat! There is one special ingredient that goes into this recipe for fantastic banana bread..sour cream. This special and surprising ingredient brings this moist flavor and texture to the bread that makes it truly delicious!ย  With just one special added ingredient..it makes this recipe for banana bread by far, the best!

Whether you serve it as a dessert, for breakfast with a little melted butter (I also add cinnamon & sugar), or just as a snack..this delicious loaf of banana bread is great to have on your counter. I also love this recipe because all of the ingredients are usually what you already have within your pantry, then just add some sour cream!

Ingredients:

  • 1/2 Cup – Butter (Melted)
  • 1 Cup – Sugar
  • 2 – Large Eggs
  • 1 Tsp – Vanilla Extract
  • 1 1/2 Cup – Flour
  • 1 Tsp – Baking Soda
  • 1/2 Tsp – Salt
  • 1/2 Cup – Sour Cream
  • 2 Medium Bananas – (Mashed!)

Instructions:

  • Preheat your oven to 350 Degrees.
  • In a large bowl, mix together your melted butter and sugar.
  • Mix in your eggs and vanilla.
  • Combine flour, baking soda, and salt (in separate bowl), then add into wet mixture.
  • Mix until smooth, then add in your sour cream and bananas.

  • Put batter into a 9 by 5 bread dish that has been greased.
  • Bake for 60 Minutes.
  • Let cool for about 10 minutes before cutting into it.

Spread with a little butter and cinnamon & sugar! Yum!

Cookie Dough Cheesecake Bars

It’s exactly what it says in the title people..deliciousness. This is honestly the perfect treat for me. I’m a lover of cookie dough and a deep lover of cheesecake; you put them together and you’ve got heaven. While this recipe is not a simple as the others I have posted, it is still relatively easy and of course SuPeR GoOd!! Enjoy my loves..

Cookie Dough Cheesecake Bars:

Ingredients:

For the Crust:

  • 1 1/2 cups – Graham Cracker Crumbs
  • 5 tbs – Melted Butter

Cookie Dough:

  • 5 tbs – Butter (At Room Temp.)
  • 1/3 cup – Brown Sugar (Packed)
  • 3 tbs – Sugar
  • 1/4 tsp – Salt
  • 1 tsp – Vanilla Extract
  • 3/4 cup – Flour
  • 1 cup – Salt

For the Cheesecake Filling:

  • 10 oz – Cream Cheese (softened)
  • 1/4 cup – Sugar
  • 1 – Large Egg
  • 1 tsp – Vanilla Extract

Instructions:

  • Preheat oven to 325 degrees.
  • Place foil into bottom of 8×8 baking pan and spray with non-stick spray.
  • Mix together Graham Cracker Crumbs with melted butter, then pack firmly into bottom of 8×8 baking pan.
  • Bake in preheated oven for 6 minutes.
  • Prepare Cookie Dough: Mix together softened butter and sugars, then mix in salt and vanilla until soft and thoroughly combined. Slowly beat in flour and chocolate chips. Set Aside.
  • Prepare Cheesecake Filling: Cream together cream cheese and sugars until smooth. Mix in vanilla and egg until well mixed.

  • Pour Cheesecake Filling onto graham cracker crust.
  • Flatten separate pieces of cookie dough between palms, then place onto filling until covered.

  • Bake for 30 to 35 minute, let cool completely.
  • Enjoy!!

Oreo Stuffed Chocolate Chip Cookies!

Let me just have a minute before I continue . . . Okay! Sorry guys, it’s just this recipe! Oh MAN! Delicious! I found this recipe on a fellow bloggers page and was instantly intrigued. Just take a second and read this.. an Oreo cookie stuffed inside of a homemade Chocolate Chip Cookie. Yes, there is such a thing and it is truly delicious. All you need is some Oreo’s and your basic chocolate chip cookie recipe.

Oreo Stuffed Chocolate Chip Cookies:

Ingredients:

  • 2 Sticks – Butter (Softened)
  • 3/4 Cup – Brown Sugar
  • 1 Cup – Sugar
  • 2 – Large Eggs
  • 1 Tbs – Vanilla Extract
  • 3 1/2 Cups – Flour
  • 1 Tsp – Salt
  • 1 Tsp – Baking Soda
  • 10 oz Bag – Chocolate Chips
  • 1 bag – Oreo Cookies

Instructions:

  • Preheat oven to 350 Degrees.
  • Mix together softened butter and sugars in a large bowl (Mix Well).
  • Add eggs and vanilla extract until well mixed.
  • In a separate bowl mix together flour, salt, & baking soda.
  • Slowly add flour mixture to wet mixture along with chocolate chips (Mix Well!!)

  • Put one spoonful of dough onto each side of Oreo and roll until completely covered (You may find an easier method).
  • Place onto a greased baking sheet.

  • Cook for about 13 to 15 minutes.
  • Let cool for 5 minutes, will make about 24 cookies.
  • ENJOY!!! ๐Ÿ™‚

Soda Can Cupcakes.

I was a little skeptical when I stumbled upon this recipe on Pinterest; Soda and Cupcakes just did not seem like a logical mix to me. Boy, was I pleasantly surprised! Soda Can Cupcakes are actually really good and yes, you can actually taste the flavor of the soda (if you use the correct kind of mixture). I used Orange Soda with Yellow Cake mix to attempt to make a Oranges & Cream type of flavor. You can use any type of soda or cake mix of your choice (Even Diet Soda will work!), I thought a Root Beer Float flavor would be good! Also, this recipe only calls for 2 ingredients! WOOO, EASY & CHEAP!!

Soda Can Cupcakes: Oranges & Cream

Ingredients:

  • 1 can – Orange Soda (I got the 2 liter, it was cheaper & 1 1/2 cup is equivalent to 1 can)
  • Yellow Cake Mix
  • Frosting of your choice

Instructions:

  • Preheat oven to 350 degrees.
  • Place cupcake liners in standard cupcake dish.
  • Mix together soda and cake mix until there are no lumps.
  • Fill trays 2/3 full with mixture.

  • Cook for 18-20 minutes.
  • Let cool completely before adding frosting.

Ice Cream Cone Cupcakes

This is a fun and simple twist on boring ol’ cupcakes. These Ice Cream Cone Cupcakes are just as cute and good as the real thing! A great recipe for birthday parties or just if you’re craving something sweet. While these treats look wonderful, the simplicity to make them is also wonderful.

Ice Cream Cone Cupcakes:

Ingredients:

  • 12 – Cake Ice Cream Cones
  • 1 box – Cake Mix (& Ingredients to make)
  • Frosting of your choice
  • Sprinkles

Instructions:

  • Preheat oven to 350 Degrees.
  • Place sheet of tin foil over a standard cupcake dish.
  • Poke hole with knife into each tray to wedge cone into (To keep them upright).

  • Mix cake batter and fill cones about 3/4 full (Don’t overfill, cake will rise).
  • Bake for about 25 to 30 minutes.
  • Poke bottom of each cone with a fork, so they do not get soggy.
  • Allow about 15 minutes to cool.
  • Place frosting into piping bag and swirl on top to resemble an ice cream cone.
  • Top with sprinkles, then you’re done!

Chocolate Covered, Peanutbutter Stuffed Pretzels

If you are looking for a quick snack, look no further. This is for the peanut-butter lovers out there and yes, I too have a deep love for peanut-butter. I’m sure these would also be really fun to make with children…P.S. There is more to the filling then just peanut-butter ๐Ÿ˜‰

Chocolate Covered Peanut-butter Stuffed Pretzels

Ingredients:

Here ya go!

  • ย 1 cup – Peanut-butter (creamy)
  • 2 tbs – Softened Butter
  • 3/4 cup – Powdered Sugar
  • 3/4 cup – Brown Sugar
  • 1 bag – Semi-Sweet Chocolate Chips
  • 1 bag – Pretzels

Instructions:

  • Mix together butter and Peanut-Butter with fork.
  • Add sugars and mix until combined.
  • Roll filling into balls (the size of 1 tsp.)
  • Place ball between 2 pretzels and press.
  • Place in freezer for 25 to 30 minutes.
  • Heat up chocolate and dip half of pretzel.
  • Put back in freezer for about 20 minutes.

Santa Hat Brownies.

I hope you didn’t think I could go through the holidays and not post a holiday recipe. I found this recipe from a fellow blogger and it’s so easy and fun to make. Also, they are sooo cute!

Santa Hat Brownies:

Here's what you will need.

Ingredients:

  • Brownie Mix (& ingredients to make them)
  • Frosting of your choice
  • Strawberries

Instructions:

(I made a few adjustments. Usually for this recipe you’re supposed to have a mini cupcake dish, I didn’t. The mini will make double the recipe (24), but I just used a regular cupcake dish, so they were jumbo size and made 12)

  • Preheat your oven to 350 degrees.
  • Grease cupcake dish with Pam.
  • Mix your brownie ingredients.
  • Fill cupcake trays about half full of mix.
  • Bake for about 25 minutes.
  • Let brownies cool for 15 minutes.
  • Remove brownies and cut off tops of strawberries.

  • Place strawberry in the middle of the brownie.
  • Put frosting in piping bag and put around and on top of brownie.
  • Then you’re done! :)))

Cheesecake Stuffed Strawberries.

Okay, this recipe turned out to be one of my favorites so far. Seriously, unbelievably delicious. I am a deep lover of cheesecake and I also love strawberries, so when I stumbled across this recipe I was instantly interested. Guess what, it’s super easy to make!!!! Trust me on this one…you’re going to want to make these!! And yes, they really taste like cheesecake!

Cheesecake Stuffed Strawberries:

This is all you need, folks!

Ingredients:

  • 1 Package – Strawberries (the bigger, the better)
  • 8 oz – Cream Cheese
  • 3 or 4 tbs – Powdered Sugar
  • 1 tsp – Vanilla Extract
  • Graham Cracker Crumbs

Instructions:

  • Cut off the top of your strawberries, then with paring knife remove inside of berry.

Tip: Cut off bottom to have them stand up.

  • ย Combine cream cheese, powdered sugar, and vanilla extract (until soft).
  • With piping bag (I used a zip-block bag and cut a hole), fill the strawberries.

  • Dip top of strawberries into graham cracker crumbs.
  • Then eat!!

Cake Batter Blondies.

So if you’re looking for another fun, easy but also delicious recipe..look no further!

Cake Batter Blondies – think brownies, but with cake! Seriously, good gooey deliciousness.

Ingredients:

Here's what you will need.

  • 1 box – Yellow Cake Mix
  • 1/4 cup – Canola Oil
  • 1/2 cup – Milk
  • 1 – Egg
  • 1/4 cup – Rainbow Sprinkles
  • 1/2 cup – White Chocolate Chips (Optional)

Tip: You may want to increase amount of sprinkles, mine did not seem to have enough.

Instructions:

  1. Preheat oven to 350 Degrees
  2. Combine first four ingredients in a large bowl (add milk slowly).
  3. Add in sprinkles and white chocolate chips.
  4. Bake for about 25 minutes (8-inch cake pan works best)
  5. Center will look gooey when you pull out, that’s what you want!
  6. Let set for about 20 minutes.

Looks like an ordinary cake, wait til' you see the inside!

The gooey center tastes soo good ๐Ÿ˜‰
