Black Bean Salad

This is another typical “Randy Recipe” ..it’s quick to make and really tasty. If you are cooking Mexican and need a quick side dish or you need a quick dish to bring to a party, this Black Bean Salad will be perfect for you. It also works great as an appetizer for any meal! Also, it only takes minutes to make!

Black Bean Salad:

Ingredients:

  • 1 can – Black Beans (Rinsed/Drained)
  • 1 can – Sweet Corn
  • 1/2 – Red Bell Pepper (Chopped)
  • 1/2 – Red Onion (Chopped)
  • 1 1/2 tsp – Ground Cumin
  • 2 tsp – Hot Sauce
  • 1 – Lime (Juiced)
  • 2 tbs – Vegetable Oil or Olive Oil
  • Salt & Pepper
  • For extra flavor, add a few chopped leaves of cilantro.

Instructions:

  • Combine all ingredients in a large bowl.
  • Let set for 15 minutes for flavors to combine.
  • Enjoy!

Cookie Dough Cheesecake Bars

It’s exactly what it says in the title people..deliciousness. This is honestly the perfect treat for me. I’m a lover of cookie dough and a deep lover of cheesecake; you put them together and you’ve got heaven. While this recipe is not a simple as the others I have posted, it is still relatively easy and of course SuPeR GoOd!! Enjoy my loves..

Cookie Dough Cheesecake Bars:

Ingredients:

For the Crust:

  • 1 1/2 cups – Graham Cracker Crumbs
  • 5 tbs – Melted Butter

Cookie Dough:

  • 5 tbs – Butter (At Room Temp.)
  • 1/3 cup – Brown Sugar (Packed)
  • 3 tbs – Sugar
  • 1/4 tsp – Salt
  • 1 tsp – Vanilla Extract
  • 3/4 cup – Flour
  • 1 cup – Salt

For the Cheesecake Filling:

  • 10 oz – Cream Cheese (softened)
  • 1/4 cup – Sugar
  • 1 – Large Egg
  • 1 tsp – Vanilla Extract

Instructions:

  • Preheat oven to 325 degrees.
  • Place foil into bottom of 8×8 baking pan and spray with non-stick spray.
  • Mix together Graham Cracker Crumbs with melted butter, then pack firmly into bottom of 8×8 baking pan.
  • Bake in preheated oven for 6 minutes.
  • Prepare Cookie Dough: Mix together softened butter and sugars, then mix in salt and vanilla until soft and thoroughly combined. Slowly beat in flour and chocolate chips. Set Aside.
  • Prepare Cheesecake Filling: Cream together cream cheese and sugars until smooth. Mix in vanilla and egg until well mixed.

  • Pour Cheesecake Filling onto graham cracker crust.
  • Flatten separate pieces of cookie dough between palms, then place onto filling until covered.

  • Bake for 30 to 35 minute, let cool completely.
  • Enjoy!!

After Midnight

After Midnight:

Walk past the railroad tracks,
Just after midnight.
Follow the stars,
If you reach the woods,
You have gone to far.

I’ll be there in my white lace gown,

Follow the sound of my gentle laugh.

Pick the flowers that only bloom at night,
A white rose you shall place within my hair,
The fragrant scent of jasmine fills the air,
You catch your breath at my enchanting stare.

I feel your warmth upon my skin,
They say at home, you are a sin.
As they bound your hands,
A fate they could not understand.
The night I learned I loved so much,

Oreo Stuffed Chocolate Chip Cookies!

Let me just have a minute before I continue . . . Okay! Sorry guys, it’s just this recipe! Oh MAN! Delicious! I found this recipe on a fellow bloggers page and was instantly intrigued. Just take a second and read this.. an Oreo cookie stuffed inside of a homemade Chocolate Chip Cookie. Yes, there is such a thing and it is truly delicious. All you need is some Oreo’s and your basic chocolate chip cookie recipe.

Oreo Stuffed Chocolate Chip Cookies:

Ingredients:

  • 2 Sticks – Butter (Softened)
  • 3/4 Cup – Brown Sugar
  • 1 Cup – Sugar
  • 2 – Large Eggs
  • 1 Tbs – Vanilla Extract
  • 3 1/2 Cups – Flour
  • 1 Tsp – Salt
  • 1 Tsp – Baking Soda
  • 10 oz Bag – Chocolate Chips
  • 1 bag – Oreo Cookies

Instructions:

  • Preheat oven to 350 Degrees.
  • Mix together softened butter and sugars in a large bowl (Mix Well).
  • Add eggs and vanilla extract until well mixed.
  • In a separate bowl mix together flour, salt, & baking soda.
  • Slowly add flour mixture to wet mixture along with chocolate chips (Mix Well!!)

  • Put one spoonful of dough onto each side of Oreo and roll until completely covered (You may find an easier method).
  • Place onto a greased baking sheet.

  • Cook for about 13 to 15 minutes.
  • Let cool for 5 minutes, will make about 24 cookies.
  • ENJOY!!! 🙂

This was based on a reflection of my past. Sometimes you have to revisit and reflect on hard moments in your life to fully understand why they are necessary. Hope you like 🙂

The air is warm, reminding of your embrace.

Crashing hard against the window,
Were the tears that fell for you.
I could only run so far away,
From one of my hardest days.

A mother’s love that could not heal,
A broken heart is something we must all feel.
I run to the hills that I cannot find,

With the realization that I am alone.

Busy Bee..(Update!)

Well hello everyone…I must say it looks like a Ghost Town around here!

I have been super busy! School and work began about 2 weeks ago and I have never been more busy! I am enrolled in over full time in college and I work almost full time at my job. This equals to about 13 hour days of exhaustion and when I actually get a day off I’m immersed in school work or too exhausted to move! With that and all of my other priorities in life..my precious bloggie has had to suffer! I know, it’s awful!

I ask you to please just be patient..more posts are on the way! I have not had many opportunities for new recipe ideas, but I have been contributing to my poetry. Randomly throughout the day a catchy lyrical creation will pop into my head and I will instantly write it down or text it to myself.and that’s how the magic begins. I just have to get it out of my head and get it on paper (or on my bloggie!).
