Croissant Pizza Rolls

My next recipe is for a quick appetizer and another recipe I found on Pinterest, but added my own little twist. Hope you like 😉

Croissant Pizza Rolls:

Ingredients:

  • 4 Pieces – String Cheese (Cut in Halves)
  • 1 package – Croissants (8)
  • 1 package – Pepperoni
  • 1 tsp – Italian Seasoning
  • 1 tsp – Garlic Salt

Instructions:

  • Preheat oven to 375 Degrees.
  • Unroll croissant rolls flat on baking sheet.
  • Place 5-7 pepperoni’s on large end of croissant.
  • Place cheese on small end and roll in from small end.

  • Sprinkle with Italian seasoning and Garlic Salt.
  • Cook for about 10 to 12 minutes.

Sea Storm.

This poem was inspired by the picture below. As soon as I saw it my imagination took over and..I wrote this. Hope you like 🙂

Sea Storm.

Rain is dripping down your face tonight,
As lighting flashes in the night sky.
You hold my body close to you,
Our hair standing on end,
Goosebumps on my skin.
From salty kisses you give to me,
From your embrace I feel the warmth within.

The dangerous waters of the surrounding sea,
A flash reflecting an electric beat.
Drumming loud, I can hear our hearts,
Hand in hand as we twirl around,
Our grasp is tight, we’ll never fall apart.

The crashing waves cool to touch,
The power of the thunder rolling in the dusk.
A howling gust to a warm breeze,
The rush of passion with your breath inside of me.
It’s magnetic, It’s electric..
To the point I cannot breathe,
Like lightning striking the surface of the deep dark sea.

We walk on water, fore you have paved the way..
The storm around us is raging on.
Its power we whisper, but must never say.

Doing the Best with what I have..

Hello Everyone, I’m just checking in again here…this time with the cooking situation on my Bloggie!

So with my recipes, I’m sure some of you are starting to notice a pattern… They are all fun, simple, & inexpensive! It’s kind of my thing 😉 As you know, I am a college student on my own without the highest bank account. So, the recipes are affordable because they have to be! I search and think of recipes that look just as good as an expensive meal but are actually budget friendly!

Sometimes I feel that some of the recipes that I post aren’t exactly too complex. There are several reasons for this..

    • One reason is, they are simply not meant to be. My hook, if you will, is recipes that are simple and inexpensive, but look and are just as good as the expensive ones. Simple, yet complex. <Kind of like myself>
    • Another, is the fact that I’ve never really had any training from anyone or anywhere when it comes to cooking. I am currently teaching myself. With no help, but following a recipe, a little common sense, and a whole lot of Luck!
    • Also, like I mentioned before, I don’t have a whole lot of money for lavish, expensive culinary creations. I do the best with what I have..And my recipes are very budget friendly which can be very helpful to others who are also Budget Betty or Frugal Freddy’s like myself.

One day, I hope to look back on my simple recipes and recognize them as my learning experiences while I’m cooking a fancy and truly complex culinary creation. I feel like I need to go through this step to get to where I hope to be (and who I hope to be) in the future.

Soda Can Cupcakes.

I was a little skeptical when I stumbled upon this recipe on Pinterest; Soda and Cupcakes just did not seem like a logical mix to me. Boy, was I pleasantly surprised! Soda Can Cupcakes are actually really good and yes, you can actually taste the flavor of the soda (if you use the correct kind of mixture). I used Orange Soda with Yellow Cake mix to attempt to make a Oranges & Cream type of flavor. You can use any type of soda or cake mix of your choice (Even Diet Soda will work!), I thought a Root Beer Float flavor would be good! Also, this recipe only calls for 2 ingredients! WOOO, EASY & CHEAP!!

Soda Can Cupcakes: Oranges & Cream

Ingredients:

  • 1 can – Orange Soda (I got the 2 liter, it was cheaper & 1 1/2 cup is equivalent to 1 can)
  • Yellow Cake Mix
  • Frosting of your choice

Instructions:

  • Preheat oven to 350 degrees.
  • Place cupcake liners in standard cupcake dish.
  • Mix together soda and cake mix until there are no lumps.
  • Fill trays 2/3 full with mixture.

  • Cook for 18-20 minutes.
  • Let cool completely before adding frosting.

Enjoy!

Ice Cream Cone Cupcakes

This is a fun and simple twist on boring ol’ cupcakes. These Ice Cream Cone Cupcakes are just as cute and good as the real thing! A great recipe for birthday parties or just if you’re craving something sweet. While these treats look wonderful, the simplicity to make them is also wonderful.

Ice Cream Cone Cupcakes:

Ingredients:

  • 12 – Cake Ice Cream Cones
  • 1 box – Cake Mix (& Ingredients to make)
  • Frosting of your choice
  • Sprinkles

Instructions:

  • Preheat oven to 350 Degrees.
  • Place sheet of tin foil over a standard cupcake dish.
  • Poke hole with knife into each tray to wedge cone into (To keep them upright).

  • Mix cake batter and fill cones about 3/4 full (Don’t overfill, cake will rise).
  • Bake for about 25 to 30 minutes.
  • Poke bottom of each cone with a fork, so they do not get soggy.
  • Allow about 15 minutes to cool.
  • Place frosting into piping bag and swirl on top to resemble an ice cream cone.
  • Top with sprinkles, then you’re done!

Homemade Mozzarella Sticks

Here is another official Lacey & Randy Project! This is Lacey’s recipe for Mozzarella Sticks and I thought it would be a great addition to my blog. Mozzarella Sticks are so delicious, everyone knows this. The problem is, you do not get much for the price you pay for them. Well, here my friends is a solution! This recipe is not only simple, but very inexpensive and it makes 24 sticks! Talk about a bang for your buck ;D Enjoy!!

Homemade Mozzarella Sticks:

Ingredients:

  • 4 – Large Eggs
  • 3/4  cup – Flour
  • 12 – String Cheese Sticks (Cut in halves to make 24)
  • 1 1/2 cup – Bread Crumbs
  • 1/2 tsp – Salt
  • 4 tsp – Italian Seasoning
  • Pepper to taste
  • Vegetable Oil for Frying

Instructions:

  • Cut String Cheese Sticks in halves (to make 24).
  • Put flour and breadcrumbs in separate bowls.
  • Add Italian Seasoning, salt and pepper to breadcrumbs (mix well).
  • Drop piece of cheese into flour until well covered. Shake off excess flour then dip into egg before dipping into breadcrumbs. Coat well, then dip back into egg and once again into bread crumbs (2nd time, coat completely).
  • Place sticks in freezer for 2 hours.

  • Heat oil to about 350 degrees and cook for about 3 to 5 minutes on each side.

Black Bean Veggie Burgers

Here is a simple but also healthy meal that is inexpensive and completely vegetarian (I got this recipe from my good friend and room-mate CJ). These turned out so good, tasted better than regular burgers in my opinion. Enjoy 😉

Black Bean Veggie Burgers:

Ingredients:

  • 1 can – Black Beans (Drained)
  • 1/2 – Green Bell Pepper (Finely Chopped)
  • 1/2 – Onion (Finely Chopped)
  • 3 Cloves – Garlic (Finely Chopped)
  • 1 tbs – Cumin
  • 1 tbs – Chili Powder
  • 1 tsp – Hot Sauce
  • 1 – Egg
  • 1/2 cup – Bread Crumbs

Directions:

  • Preheat oven to 375 Degrees.
  • Lightly oil a baking sheet.
  • In medium bowl, mash beans until they are thick and pasty.
  • Add chopped veggies into beans, mix thoroughly.
  • In a small bowl mix together egg with Chili Powder, Cumin, & Hot Sauce.

  • Mix Egg Mixture into black beans.
  • Add in Bread Crumbs until mix can form into patties.
  • Form into patties, it should make about 4.
  • Cook patties for about 10 minutes on each side.

Tip: We used potato buns which made the burgers taste so much better.

Music..in my opinion.

So, there is one portion of this blog that I have contributed nothing towards. MUSIC! If you know me, you know music is a HUGE passion of mine. Sometimes I just like to sit for hours and discover new artists. I have NO discrimination when it comes to music, good music is good music whatever the genre may be. Lately, I tend to stray away from mainstream music just because it all sounds the same, but sometimes I can become infected by an amazing hook or melody.

2011 was a great year for music and 2012 seems like it’s going to be another great year for music. So I thought I would post some of my favorite albums and songs of 2011 and upcoming music I’m excited about that will be released in 2012.

Florence + the Machine’s: Ceremonials certainly did not disappoint when it came out. I was a huge fan after hearing their first album, and let’s not joke here..with an exception of maybe Adele, she has one of the best vocals in music today. While, I will say I enjoyed their first album a tad bit more, I really love this album as well. The songs are just so BIG and her voice makes them so captivating and emotional. My favorite songs have to be Spectrum and Never Let Me Go. Every time I listen to this album my skin always erupts in goosebumps. The way she incorporates  classic instruments like the harp into modern beats and the added compliments of her flawless voice, you really get something amazing for your ears. I highly recommend this album and also their first, Lungs.

Another one of my favorite albums from 2011 is from the legendary Stevie Nicks. I’ve always been a fan of Nicks and of course Fleetwood Mac, and I can honestly say that her latest album In Your Dreams is one of her best. This album did not get as recognized as I hoped it would, even-though it was widely praised by critics. Each song from the album was its own and wonderful in its own way. Stevie’s fantasy themed song writings and instrumentals that she is famous for are easy to identify and are at her best with In Your Dreams. While her lead single Secret Love was very satisfying, I found my favorite song was New Orleans and also Wide Sargasso Sea. This is one of those albums you can listen too without skipping a song. I would often listen and quickly find myself daydreaming.

Meg & Dia, I bet you’re wondering who the hell is this? Well, I am a big fan of singer/songwriter artists who are not really known by anyone at all; they are kind of my little secret. I’ve been following these girls since I was in high school and they’ve gone a bit off the radar for awhile. You may recognize one of the sisters as Dia Frampton who was the runner-up on The Voice. Well, I was quickly captivated by this sister act’s latest album: Cocoon. These songs are so precious and well written, but you should know they were recently dropped by their record label, so this album was recorded in their garage and bathroom; I think that is what makes it so much more precious. I fell in love with their song Bandits, which quickly became one of my favorite songs of the year. Also, I love Unsinkable Ships, Breakdown, & Mary Ann. Just give this album a chance and you’ll quickly fall in love; the sound just feels so vintage and sunny.

What is there to say about Adele? Well, she has the best voice in music today, I can say that with confidence. 19 was incredible and 21 is just as good, if not better. She was by far the best artist of 2011, with her voice, songs, and performances being flawless. Her emotion and talented vocals are seen in my favorites Rolling in the Deep and Set Fire to the Rain. The fast paced Rumour Has It and vintage I’ll Be Waiting make you realize how talented and genuine she actually is. Also, check out her cover of Lovesong and captivating ballad Someone Like You. This is honestly one of the best albums seen in the last 10 years and of course one of the best of the 2011.

So there was obviously a lot more music that was amazing in 2011, but those would have to be my favorites. Now that 2012 is upon us, there are many albums I am anxiously anticipating. So, I thought I would mention a few below:

One album I’ve been waiting a very long time for is from one of my favorites artists Michelle Branch. Her latest upcoming album is called West Coast Time where she is going back to her pop roots. Her new single Loud Music infects me every time I listen to it. Also, you can get a free download of one of her songs off of the album called If You Happen To Call, which is so good. The release date continues to get pushed back, so lets hope that the album gets released soon.

Another duo of sisters I just recently discovered is the Swedish sisters First Aid Kit. These girls are a blend of alternative and folk, but their talent is instantly recognizable. Their first single The Lion’s Roar sounds bit like Irish band Mumford & Sons and full of raw emotion. I’ve been recently captivated by their tribute song that has a bit of a country twang called, Emmylou; this song will most likely become one of my instant favorites, I honestly cannot stop listening. I think everyone should watch these girls, their vocals, songwriting, and overall talent is clear when you first listen to them. I predict them to become big in 2012, I cannot wait for their album to be released.

Another album being released very soon is from pop/folk artist Ingrid Michaelson. Her upcoming album Human Again is supposed to be a bit more serious and surely will not disappoint, I’m anxiously anticipating this album because she is one of my favorites. And, of course my favorite artist Taylor Swift is also due to release another album late this year, which I am extremely excited for; I am hoping for a new and more mature sound; I’m sure we won’t be disappointed.

Me VS Little Voice In My Head

Okay, so I can finally feel like it’s happening..the moment I’ve been dreading since I started this blog. That little voice has popped into my head making those oh so rude, discouraging comments. I mean, before I would just block him out or tell him to shut up! But there always comes a time in any of my ventures where the little voice takes control and I eventually give up.

Bad news folks…he has finally shown up again and his mission: To STOP my Blogging! Granted, I always expected this day would come but I kept on pushing and told myself to ignore his rude comments!

What kind of rude, discouraging comments do I face everyday you ask? Here are some examples: What is the point of all of this? Is anything you’re posting even any good? Does anyone even care about what you are posting? You are wasting your time! You’re wasting your money on all these ingredients and supplies!! ETC.!!!!!!

SHUT UP LITTLE VOICE, YOU RUIN EVERYTHING!!!!!!

The whole point of this blog is for self-discovery and to exercise my hobbies and things I enjoy in life (cooking, writing, crafts, etc.). Even my New Years Resolution was to continue to blog and discover more about myself. I can’t give up but I sometimes feel, what is the point?

I guess the big question here is: How do I ignore or overcome that little voice in my head? I guess it’s all about strive and willpower? I guess we will have to see how badly I want this?

I have a history on giving up on projects I’ve started in the past, but I really don’t want to give up on this one. I need this, I need purpose! I don’t want to waste my life NOT pursuing what I am actually really good at.

So, I will continue to do my best at fighting the little voice in my head and keeping up with my hobbies (cooking, writing, and crafts) regardless of what he says. I really do not want to give up on this. Just an FYI, in the coming weeks I will have to return to both school and work, so time to add to my blog is going to become even more difficult. So, my very few readers, I am asking you to be patient and bare (not sure if I used that right) with me! Lets see if I can beat the discouraging little voice in my head.
